Pecan pie and chess pie bars are recipes using frozen pie dough. It's possible to make pie dough from scratch and freeze it or use already frozen pie dough.
To make homemade pie dough, combine 2 1/2 cups flour with 1 teaspoon each salt and sugar. Use a pastry blender or food processor to cut in 2 sticks of chilled butter. Add ice water, and work the dough until it comes together. Divide the dough in half, flatten the halves, and freeze until ready for use.
To make a pie crust, roll out the dough, lay it into a pie tin, and trim the excess. Freeze the pie crust whole.
For pecan pie, mix 1 cup brown sugar, 1/3 cup melted butter, 3/4 cups light corn syrup, 1/2 teaspoon salt and 3 eggs. Stir in 1 1/2 cups pecan halves. Pour the mixture into a frozen pie crust, and bake at 375 F for 35 to 45 minutes. Cover the crust with aluminum foil halfway through baking.
To make chess pie bars, roll out the pie dough so it covers an ungreased baking dish. Bake for 20 minutes. In a bowl, whisk 3 eggs with 1 cup sugar and 1.5 teaspoons cornstarch. Pour 1 1/2 cups buttermilk, 1/2 cup melted butter and 1 teaspoon vanilla into the egg mixture. Pour this into the crust, and bake at 350 F for 35 minutes.
