Honest Food has a recipe for fried frog legs, and Acadian Table shows a recipe for buttermilk-fried frog legs with mustard cream. In both of these recipes, the frog legs are battered in flour before frying.
To make Honest Food's fried frog legs, soak 1 1/2 pounds of frog legs in 1 cup of milk for an hour. Mix 1 cup of flour with salt and pepper in a bowl. In a pan, heat 5 tablespoons of butter. Coat each frog leg evenly in seasoned flour, then place in the hot butter. Fry each frog leg until golden brown on both sides. Once the legs are fried, set them on a rack to drain.
