Some recipes featured on the Cityline television show are Classic Canadian Lobster Rolls and Lemon Blueberry Tarts. Both recipes are simple to make and easy to follow.
To make the lobster rolls, cook 4 1 1/2-pound lobsters in a pot of boiling water for nine minutes. Once cool, remove the meat, and chop into bite-sized pieces. Place into a bowl, and add 1 diced celery stalk, 1 bunch chopped green onion, 1/2 cup mayonnaise, the juice of 2 lemons and a splash of hot sauce. Season with salt and pepper. Stuff the mixture into 8 top-cut toasted and buttered hot dog buns.
To make the lemon blueberry tarts, combine 3/4 cup flour, 1/4 cup sugar and 1/4 teaspoon salt in a food processor. Add 6 tablespoons butter, 1 tablespoon cold water and 1 egg yolk. Mix until just blended, and form into a disc. Roll into a 16-by-6-inch rectangle, and press into a pie plate. Refrigerate for 30 minutes, and preheat the oven to 400 degrees F. Bake the crust for 20 minutes with weights; remove, and bake for five minutes.
In a saucepan, combine 3/4 cup sugar, 2 tablespoons cornstarch and the zest of 2 lemons. Add 2 eggs, 2 egg yolks, 1/3 cup water and 1/3 cup lemon juice. Cook, and strain. Add 1/2 cup butter, and pour into the crust.
In another saucepan, combine 2 tablespoons apricot jam, 1 tablespoon water and 3 cups blueberries. Spread on the lemon curd, and refrigerate for four hours.
