There are many recipes for cooking elk, including elk sausage, elk stew and blue cheese and garlic elk burgers. Elk is not a very common meat, but can be found more often in grocery stores or butcher shops than previously.
The elk sausage needs more fat than is available in the lean elk meat, so it is mixed with pork sausage. The herbs used in the elk sausage are standard sausage seasonings. These include thyme, oregano and sage. Cooks can add red chili pepper flakes, green chili peppers and sun-dried tomatoes to give the sausage a more spicy kick.
The elk stew is good for any time of the year, but is especially good for cold weather. The ingredients are simple with flour, salt, onions, garlic, sugar and paprika. Standard stew vegetables are used, but if they aren't in season then any vegetables could be used in the stew. The soup has to simmer for around 2 hours or until the vegetables are tender. If the broth is too thick water can be added to thin it.
The blue cheese and garlic elk burgers have the cheese and garlic ground or mixed into the ground elk meat. This gives the meat a nice balance of flavors instead of putting the cheese on top. The burger patties also have shallots, olive oil, Worcestershire sauce, salt and ground black pepper as well.
