The Little Chief smoked salmon recipe takes around six to eight hours to prepare, uses 3 pounds of salmon and is specifically designed for the Little Chief electric smoker. Other ingredients include 1 cup of brown sugar, 1/2 cup of kosher salt, 3 tablespoons of dry dill weed and 1 tablespoon of ground black pepper. Cut each fillet into 4-inch strips, rinse, dry, then evenly coat every side with sugar and salt. Refrigerate for two to four hours, and rinse off any excess sugar and salt. Pat dry to remove moisture. Evenly coat the fillets with pepper and dill weed, and place on a cooling rack for one hour or until dry. Fill the Little Chief smoker with chips and place in the fillets. Smoke the salmon for two to three hours.
Little Chief is a box style smoker that features a permanently set temperature of around 160 degrees Fahrenheit. Except for Little Chief and Big Chief, most box and cabinet style smokers feature temperature control, while vertical water smokers do not.
