Some easy recipes for Mexican casseroles include Mexican beef cobbler, stacked chicken enchiladas and Mexican chicken casserole. Chicken tamale casserole is another easy Mexican recipe that uses boxed corn muffin mix and ready-made enchilada sauce.
To make chicken tamale casserole, mix together 1/4 cup of shredded Mexican blend cheese, 1/2 cup of fat-free milk, 1/4 cup of egg substitute, 1 can of cream-style corn and 1 box of corn muffin mix. Season with 1 can of chopped and drained green chilies, 1 teaspoon of ground cumin and 1/8 teaspoon of ground red pepper. Pour the mixture in a baking dish and cook at 400 degrees Fahrenheit for 15 minutes. Poke the casserole with a fork, and pour 1 can of red enchilada sauce over the top, followed by 2 cups of shredded, cooked chicken breast and 3/4 cup of shredded Mexican blend cheese. Bake for 15 more minutes, and serve with sour cream.
Cook 1 1/2 pounds of ground beef over medium heat for at least eight minutes to make the beef cobbler. Drain, then stir in 1 envelope of taco seasoning, 1 jar of salsa and 1 can of drained whole kernel corn. Pour into a baking dish, and top with 2 cups of shredded cheddar cheese. Whip up the biscuits using 1 1/2 cups of biscuit baking mix, 1/2 cup of 2 percent milk and 1/8 teaspoon of freshly ground pepper. Dollop the dough on top of the cobbler, and bake for 350 degrees Fahrenheit for 45 minutes.
