To make Cooking Light's celery-apple salad, combine 2 tablespoons extra-virgin olive oil, 2 tablespoons lemon juice, 1/4 teaspoon kosher salt and 1/4 teaspoon ground pepper. Next, add 2 cups thinly sliced honey crisp apples, 2 cups sliced celery, 1/2 cup fresh flat-leaf parsley and 1/3 cup sliced red onion. Toss together and serve.
Jamie Oliver's Southern pecan and apple salad is a slightly more sophisticated take on the dish. For this recipe, heat 1 1/2 tablespoons of butter in a saucepan. Add 3 tablespoons of brown sugar and stir until the mixture is smooth and begins to darken. Add 1/3 cup to 1/2 cup of pecans to the saucepan. Stir until the nuts are coated in the caramel mixture, then spread the nuts onto an oiled baking tray. For the dressing, combine the zest and juice of one orange with 1 teaspoon Dijon mustard, 1 tablespoon white wine vinegar, 3 tablespoons extra-virgin olive oil, salt and pepper. In a large bowl, mix 2 sliced red or green apples, the leaves of 2 chicory and a few handfuls of mixed greens. Add the dressing and the pecans. Toss and serve.
