Both Paula Deen and the Food Network have recipes for deep fried shrimp. Both recipes take 20 to 25 minutes, and both have ratings that are above average.
To make Paula Deen's fried shrimp, preheat the oil to 375 F, and line a baking tray with paper towels. In a shallow bowl, whisk together a cup each of milk, buttermilk and hot sauce. In another dish, whisk together 2 cups of flour, 1/4 cup of cornmeal, 2 tablespoons of pepper and 3 tablespoons of salt. Dry the shrimp as well as possible, and dredge them in the dry mixture, in the wet mixture and in the dry mix again.
Deep fry the shrimp in batches, and do not overload the fryer. Fry each batch for about 2 minutes, drain and serve warm.
To make the Food Network fried shrimp, preheat the oil to 350 F. In a bowl, mix 3 cups of ketchup, a tablespoon of freshly ground pepper, 1/4 teaspoon of cumin and a tablespoon each of garlic powder and salt. Also add a cup each of water and lime juice. In another bowl, have about 2 cups of flour for dredging. When ready to fry, place the shrimp in the sauce, and then into the flour. Place each shrimp into the fryer, and cook for 2 minutes before serving.
