To make chicken cosce pollo, marinate four chicken drumsticks with 2 tablespoons of olive oil, 1/2 teaspoon of black pepper, salt to taste, 1 teaspoon of paprika and 1/2 teaspoon of red pepper flakes. Set aside to marinate for about 15 to 20 minutes. In a non-stick pan, heat 1 1/2 tablespoons of olive oil, add 1 teaspoon of finely chopped garlic and one medium finely chopped onion to the pan, and sauté until the onion is halfway cooked. Add 3 tablespoons of olive oil to a separate grill pan, and brown the chicken until the drumsticks are evenly golden on all sides.
Add 1 cup of tomato sauce to the onions, and mix well with three to four fresh basil leaves. Cook for two minutes, then add the drumsticks and 1/2 cup of water. Stir well, and cook until the chicken is almost done. Transfer the chicken and sauce to a non-stick grill pan, and bake in the oven for 18 to 20 minutes at 350 degrees Fahrenheit. Serve hot with basil leaves as garnish.
To make dumdar prawns, marinate medium peeled and de-veined shrimp with salt to taste and 1 teaspoon of lemon juice. In a non-stick pan, sauté eight to 10 grated garlic cloves along with 2 tablespoons of butter and 1 tablespoon of oil. When the garlic turns golden, add the shrimp and sauté over medium heat. When the moisture evaporates, add 1 teaspoon of crushed black peppercorns and sauté until the shrimp are cooked through. Serve hot.
