Campbell's Kitchen offers a cranberry nut stuffing recipe that calls for Pepperidge Farm Country Style Stuffing and dried cranberries. Taste of Home's cranberry walnut stuffing recipe is made with cubed, day-old bread and fresh cranberries.
To make Campbell's cranberry nut stuffing, heat 1 stick of butter in a saucepan. Add 1 cup of sliced onion and 1 cup sliced celery, and cook until tender. Remove the pan from the heat, and stir in 3 cups chicken broth, 1/2 cup dried cranberries, 1/2 cup chopped walnuts and 1 package Pepperidge Farm Country Style Stuffing. Pour the mixture into a 2-quart casserole dish, and bake for 30 minutes at 325 F.
Alternatively, make Taste of Home's cranberry walnut stuffing by sauteing 2 chopped onions and 2 chopped celery ribs in 1 stick of butter. Add 6 cups of cubed, crustless, day-old bread, along with 1/2 cup chopped walnuts, 1/2 teaspoon salt, 1/2 teaspoon pepper, and 1 1/2 teaspoons poultry seasoning. Stir in 1 cup fresh cranberries. In a separate bowl, combine 3 eggs, 1 1/2 cups chicken broth and 2 tablespoons brown sugar; stir this into the bread mixture.
Pour the stuffing into a greased, 2-quart casserole dish, cover, and bake at 325 F for 45 minutes. Uncover, and bake for an additional 15 minutes.
