To make easy Cornish pasties, cook 1 chopped onion in 2 tablespoons of olive oil. After 5 minutes, add 4 sprigs of fresh thyme and 2 crushed garlic cloves for a few minutes. Add 8 or 9 ounces of beef mince to the pan, and brown for 10 minutes before adding 1 diced potato and 1 diced carrot. Cook the vegetables for a few minutes. Stir in 1 tablespoon of flour, 17 ounces of beef stock and 1 pinch of salt and pepper, then reduce heat and simmer for 30 minutes.
Roll out ready-made crust pastry in a circle, and scoop some of the filling into the shell. Fold the dough in half, and press the edges closed. Brush the top of the pastry shell with 1 beaten egg. Cook at 350 degrees Fahrenheit for 30 minutes.
Instead of purchasing pastry shells, you can make your own by cutting 1 cup of shortening and 2 tablespoons of butter into a mixture containing 4 cups of all-purpose flour, 2 teaspoons of salt and 1 pinch of baking powder. Slowly mix in 2/3 cup of cold water until it forms a ball. Divide the ball into 12 pieces, then roll each piece into circles on a floured surface. After adding the filling, brush the pastry with an egg and heavy whipping cream mixture.
