An easy classic Reuben sandwich can be made using 2 slices of rye bread, 2 tablespoons of butter, 1/4 cup of thousand island dressing, 4 slices of thinly cut corned beef brisket and 3 tablespoons of sauerkraut. The sandwich can be completed with 2 slices of Swiss cheese.
To make the sandwich, first butter both slices of bread and place one face down on a flat surface. In order, top one slice of bread with 2 tablespoons of dressing, corned beef, sauerkraut, cheese and 2 tablespoons of dressing. Place the second slice of bread on top, butter-side up, and place sandwich in a preheated saucepan and saute each side until the bread is golden brown and the cheese is melted.
A recipe for corned beef and coleslaw sandwiches requires 2 cups of coleslaw mix, 3 tablespoons of sour cream, 4 teaspoons of mayonnaise, 1 tablespoon of horseradish sauce and 1 teaspoon of mustard. The recipe also calls for 1/8 of a teaspoon salt, 4 slices of rye bread, 1/2 pound of thinly sliced corned beef and 8 slices of Swiss cheese.
To make the coleslaw, mix sour cream, mayonnaise, horseradish sauce, mustard and salt in a bowl. Pour the sauce over the coleslaw mix and toss until the mix is coated. Place the bread slices on an ungreased baking sheet and broil until each side is toasted. Layer with corned beef, coleslaw mixture and cheese, and broil until the cheese is melted.
