To make basic oven-baked turkey legs, place 6 bone-in, skin-on turkey legs in a roasting pan. In a separate bowl, combine 1/4 cup of softened butter, 1 teaspoon of salt, 1/4 teaspoon of pepper, 1 teaspoon of poultry seasoning and 1 teaspoon of dried thyme. Rub the butter mixture over and under the skin on the turkey legs and then pour 1/2 cup of turkey broth into the pan. Bake the turkey legs for 90 to 100 minutes at 350 degrees.
For the tamarind recipe, simmer 1/3 cup of tamarind paste with 3/4 cups of water. Push the mixture through a sieve to separate the seeds and pulp. Toast 2 tablespoons of sesame seeds and 2 tablespoons of cumin seeds on medium low heat until they start to brown and then pour them in a bowl with 2 teaspoons of celery seeds, 1 tablespoon of black pepper and 1/2 teaspoon of cayenne pepper.
Blend 2 peeled garlic cloves, 2 peeled shallots, the seed mixture, the tamarind pulp, 1 tablespoon of honey and 2 teaspoons of Worcestershire sauce. Drizzle in 1/4 cup of vegetable oil and then rub the mixture over the turkey legs. Marinate for three hours. Bake the turkey legs in a covered roasting pan for 40 minutes at 375 degrees.
