What Are Some Recipes for Cooking Fresh Shrimp?

Two recipes using fresh shrimp are shrimp and grits and mixed seafood risotto. The shrimp and grits recipe requires 1 pound of shrimp, 2 bacon slices and 1/4 cup of flour. Cook the bacon, and dredge the shrimp in flour. Saute 1 cup of mushrooms in bacon fat, and add 1/2 cup of green onions, 2 garlic cloves and the shrimp. Stir in 1 cup of chicken broth and 2 tablespoons of lemon juice, and serve it with grits.

Make mixed seafood risotto by cooking 3/4 pound of peeled and deveined shrimp and 1/2 pound of cubed fish in 2 tablespoons of extra-virgin olive oil for five minutes. Remove the seafood, and stir in 1 chopped onion and 1 minced garlic clove for a few minutes before adding 4 anchovy fillets and 1 1/2 cups of Arborio rice. Once the rice becomes coated in the mixture, whisk in 1 cup of dry white wine.

Simmer the ingredients until the rice absorbs the wine, and then gradually add 4 1/2 cups of fish or chicken broth over a period of 25 minutes. Mix in the last bit of broth and 2 tablespoons of tomato paste with 1/2 cup of chopped fresh basil, 1/4 cup of grated fresh Romano cheese and the seafood.
