Broiled cobia wraps and Betty Crocker's cobia with lemon caper sauce are two recipes for preparing cobia fish. The firm, white, tasty fish are caught wild or are farmed. The farmed cobia are also used for sushi recipes.
Brush broiled cobia with olive oil before cooking. When it is finished, place the fish in a burrito wrap with fresh vegetables, according to preference. Options are sliced avocados, shredded lettuce, minced onions, sliced black olives and tomato slices.
Prepare the cobia with lemon caper sauce by frying fish pieces dusted in flour, salt and pepper, and coat with a sauce made from the fish drippings, white wine, lemon juice, chicken broth and capers.
