Taste of Home and A Southern Fairytale offer tasty recipes for cinnamon hard candy. Taste of Home's recipe calls for cinnamon oil, whereas A Southern Fairy Tale's recipe uses cinnamon flavoring.
To make Taste of Home's recipe, combine 2 cups of sugar, 1 cup of water and 1/2 cup light corn syrup in a large saucepan. Bring the mixture to a boil over medium heat, cover, and cook for three minutes. Uncover, and without stirring, cook until a candy thermometer reads 310 degrees Fahrenheit. Remove the pan from the heat, and stir in 1/4 to 1/2 teaspoon of cinnamon oil and 1/2 teaspoon red food coloring.
Pour the mixture into a greased baking sheet, and spread it to form a rectangle. Score the candy using a sharp knife, and re-cut along the scored lines to cut the candy into squares. Let the candy cool at room temperature until it is dry, then separate into squares.
To make A Southern Fairytale's recipe, cook 2 cups of white sugar, 1/2 cup of light corn syrup and 1/2 cup of water over low heat until the sugar dissolves. Bring the mixture to a boil, and without stirring, cook until it reaches 290 degrees Fahrenheit. Remove the pan from the heat, and add 2 teaspoons of cinnamon flavoring and red food coloring, as desired. Pour the mixture onto a greased marble slab, and just before it cools, use a pizza cutter to cut the candy into squares.
