Spicy turkey appetizers, mint thins, chocolate marshmallow snacks and pizza snacks are four recipes that use Ritz crackers. The mint thins and chocolate marshmallow snacks require refrigeration before serving, whereas the spicy turkey appetizers and pizza snacks are served warm.
To make spicy turkey appetizers, spread 20 Ritz crackers on a cookie sheet lined with parchment paper. Layer each cracker with 1 slice of turkey sandwich meat and 1/4 slice of pepper jack cheese. Bake the crackers at 350 degrees Fahrenheit for five minutes, and top each cracker with a teaspoon of pepper jelly. Cover each portion with 1 Ritz cracker, and serve immediately.
To make mint thins, mix 8 ounces of melted semi-sweet chocolate with 1/4 teaspoon of peppermint extract. Dip 36 Ritz crackers in the chocolate mixture, and coat them on all sides. Place the crackers on waxed paper-lined baking sheets, and sprinkle them with 1 crushed candy cane. Refrigerate the mint thins for 30 minutes.
To make chocolate marshmallow snacks, spread 48 Ritz crackers with 1 cup of peanut butter. Spread 1 cup of marshmallow cream over 48 other Ritz crackers, and place them cream side down over the peanut butter crackers. Dip the sandwiches in 2 pounds of melted milk chocolate candy coating, and place them on waxed paper-lined sheets. Refrigerate the sandwiches for 15 minutes, and decorate them with holiday sprinkles.
To make pizza snacks, top 24 Ritz crackers with 1/2 cup of ketchup, 1/2 cup of shredded mozzarella cheese and 1 teaspoon of Italian seasoning. Microwave the crackers, six at a time, on high for 15 seconds.
