One recipe that can be made in the Santa Fe Quesadilla Maker is breakfast, ham and chicken quesadillas. Combine cheese with eggs, ham or chicken between two 10-inch tortillas and cook in the Santa Fe Quesadilla Maker for 3 to 4 minutes, and garnish with salsa and sour cream, if desired. A couple of other recipes are a chicken quesadilla that is filled with cooked rotisserie chicken, salt, pepper, onion, garlic and Monterey Jack cheese, and another breakfast quesadilla recipe, which features soft flour tortillas filled with thinly sliced cured ham, cheese, scallions and pickled green jalapeno peppers.
This recipe combines cheese with eggs for a quesadilla worthy of breakfast. The eggs are cooked on the Santa Fe Quesadilla Maker before they are added in the tortilla, making for a quick breakfast with little clean up.
