Recipes that use cabbage include easy corned beef with cabbage, as well as coleslaw. The corned beef with cabbage requires 30 minutes of preparation and 12 minutes cooking time, whereas the coleslaw requires 20 minutes of preparation and no cooking.
To make easy corned beef with cabbage, cook 4 slices of bacon in a large pot until almost crisp, then remove the bacon and set it aside. Melt 4 tablespoons of butter in the grease remaining in the pot, add 1 head of coarsely chopped green cabbage and stir until the cabbage is coated. Add 1/3 cup water and salt and pepper to taste, then cover the pot and cook over medium-high heat for 10 to 15 minutes. Chop the bacon and add to the pot along with 1 can of corned beef. Cover and cook until the cabbage has reached the desired level of tenderness.
To make coleslaw, combine 6 cups shredded cabbage and 1 cup shredded carrots in a bowl. In a separate bowl, make a dressing by mixing 1 cup mayonnaise, 1/4 cup white wine vinegar, 1 teaspoon celery seed, 1/4 cup sugar and salt and pepper to taste. Add the dressing to the cabbage mixture and toss until completely coated. Chill the coleslaw prior to serving.
