To make a black rice risotto, keep 6 cups of chicken broth warm in a covered saucepan. Sauté 1 diced onion with 1 tablespoon of olive oil in another saucepan, and stir in 1 1/2 cups of black rice. Cook the mixture for one minute before pouring in 1/2 cup of dry white wine. Stir the mixture over medium-low heat until the rice absorbs the wine.

To make a black rice pudding, boil 1 cup of black rice with 3 cups of water and 1/4 teaspoon of salt in a saucepan before allowing the mixture to simmer, covered, over low heat for 45 minutes. Incorporate 1/2 cup of sugar and 1 1/2 cups of unsweetened coconut milk, and add more salt to taste. Gently cook the mixture, uncovered, until the rice is tender and the mixture thickens. Serve the pudding in individual bowls with additional coconut milk.
