Betty Crocker Bisquick coffee cake recipes range from basic streusel coffee cake to individual banana coffee cakes with glazed streusel topping. Taste of Home's cranberry coffee cake uses Bisquick and jellied cranberry sauce.
To make simple Bisquick coffee cake, mix together until blended 2 cups Bisquick mix, 2/3 cup milk, 2 tablespoons sugar and 1 egg. Spread into a 9-inch round pan. In a small bowl, mix together 1/3 cup Bisquick, 1/3 cup packed brown sugar, 1/2 teaspoon ground cinnamon and 2 tablespoons firm butter or margarine. Sprinkle streusel mixture over batter and bake in a 375 degree Fahrenheit oven for 18 to 22 minutes until golden brown.
Whisk together 2 cups Bisquick, 1/3 cup granulated sugar, 2/3 cup milk, 1/2 teaspoon ground allspice, 1 slightly beaten egg and 2 mashed ripe bananas. Divide batter among 12 greased muffin cups. Cut together with a fork until crumbly 1/2 cup flour, 1/2 cup packed brown sugar, 1/4 cup cold butter or margarine, and 2 tablespoons peanut butter, and sprinkle over muffin cups. Bake for 17 minutes at 400 degrees Fahrenheit. Remove from muffin cups after 10 minutes. Microwave 1/2 cup white vanilla baking chips with 2 tablespoons whipping cream 30 to 60 seconds, stir until smooth, and drizzle over the coffeecakes.
For cranberry coffee cake, mix together until blended 2 cups Bisquick, 2 tablespoons sugar, 2/3 cup milk and 1 lightly beaten egg. Pour into a greased 8-inch square baking dish, and drop 2/3 cup jellied cranberry sauce over the batter by spoonfuls. Combine 1/2 cup each chopped walnuts and packed brown sugar and 1/2 teaspoon ground cinnamon, and sprinkle over cranberry sauce. Bake at 400 degrees Fahrenheit for 18 to 23 minutes. Combine 1 cup powdered sugar, 2 tablespoons milk and 1/4 teaspoon vanilla. Drizzle over cooled coffeecake.
