A variety of dinner recipes use Lipton onion soup mix, including baked onion chicken, meatloaf and oven roasted red potatoes. Each recipe is easy to prepare and Lipton's dry soup mix provides most of the seasonings.
A chicken recipe featured at Campbell's Kitchen uses soup mix to spice a breading mixture. Use a rolling pin to crush 1 envelope of dry soup mix. Pour envelope contents onto a plate, and then stir in 2/3 cup plain dry bread crumbs and 1/8 teaspoon black pepper. In a shallow bowl, beat 1 egg and 2 tablespoons water. Dredge 1 3/4 pounds boneless skinless chicken breast halves into egg mixture, and then dip pieces into the dry mixture.
Transfer chicken to a baking sheet and drizzle 2 tablespoons melted butter on top. Bake for 20 minutes at 400 degrees Fahrenheit.
Make easy meatloaf by combining 2 pounds ground beef with 1 envelope dry onion soup mix, 3/4 cup plain bread crumbs and 2 eggs in a large bowl. Add 3/4 cup water and 1/3 cup ketchup and mix thoroughly. Press mixture into a large baking pan and bake, uncovered, for one hour.
Prepare a side dish of seasoned red potatoes. In a large plastic food bag, combine 1 envelope dry onion soup mix, 2 pounds red potatoes cut in half and 1/3 cup olive oil. Seal bag tightly and shake to completely coat potatoes. Transfer potatoes to a baking dish and bake for 40 minutes at 450 degrees Fahrenheit.
