One apple cookie recipe fit for diabetics is the Apple Oatmeal Cookies recipe from Taste of Home. Another is the Soft Apple Cinnamon Cookies from Diabetic Connect.
To make the first recipe, combine one box of yellow cake mix, 1 1/2 cups of quick-cooking oats, 2 teaspoons cinnamon and 1/2 cup of packed brown sugar. In a separate bowl, mix 3/4 cup of unsweetened applesauce, 1 egg, 1 cup of peeled and finely chopped apple and 1/2 cup raisins. Blend the two mixtures together and drop by the spoonful onto a greased baking sheet. Bake at 350 degrees Fahrenheit for 12 to 14 minutes or until golden brown. Allow to cool on a rack before serving.
For the second recipe, preheat oven to 400 degrees Fahrenheit and mix the following ingredients together in a bowl: 1/3 cup plus 1 tablespoon of fat free milk, 1 cup of reduced fat baking mix such as Bisquick, 1 teaspoon of cinnamon, 1/4 cup packed brown sugar and one cup chopped apples. Granny Smith apples work well in this recipe. Spray a cookie sheet with non-fat cooking spray and drop dough onto sheets in rounded spoonfuls. Bake for about four minutes or until the bottoms have developed a light golden brown color.
