To make chicken baked in cream, cut up 1 young chicken. Sprinkle the chicken pieces with 1 1/2 teaspoons of salt and pepper to taste, and dredge the pieces in 1/2 cup flour. Melt 3 tablespoons of butter in a skillet, and fry the chicken until the pieces are golden brown. Place the pieces in a casserole dish, and pour 1 1/2 cups of sweet or sour cream over them. Cover, and bake the chicken at 350 degrees Fahrenheit for two hours.
For Amish potato salad, cut 3 pounds of potatoes into quarters, and put them into a pot with enough water to cover them. Bring the potatoes to a boil, and cook them for approximately 20 minutes or until they are tender when tested with a fork. Drain the potatoes, and let them cool.
Mix together 3/4 cup mayonnaise, 3/4 cup sugar, 2 tablespoons yellow mustard, 2 tablespoons vinegar and 1 1/2 teaspoons salt. Combine the potatoes in a large bowl with 4 hard-boiled, peeled and chopped eggs. Add 1/2 cup finely chopped onions and 2 chopped celery stalks. Stir in the dressing, mixing thoroughly. Chill the potato salad for two to three hours before serving.
To make seven-minute cabbage, chop 2 cups of cabbage. Bring 2 cups of milk to a boil, and add 1 tablespoon of butter and the cabbage. Cook for seven minutes. Mix 2 teaspoons of flour with a little water and add it to thicken the sauce.
