Prepare the banana-coconut oatmeal ahead of time by soaking 1 cup of steel-cut oats with 3 cups of freshly boiled salted water in a saucepan overnight. In the morning, pour in 1 cup of coconut milk and bring the mixture to boil before simmering the oats over medium heat for approximately five minutes or until the mixture thickens and the oats are tender. Let the oatmeal cool for another five minutes before adding 1/2 teaspoon of vanilla extract, 2 chopped bananas and 1/2 cup of toasted sweetened shredded coconut.
To prepare the garlicky roasted shrimp, remove the veins from 2 pounds of jumbo shrimp, but leave the shells on. Marinate the shrimp in salted water for 15 minutes in the refrigerator before draining them well. Whisk 1/4 cup each of melted butter and vegetable oil with 6 minced cloves of garlic, 1 teaspoon of anise seeds, 1/2 teaspoon of red pepper flakes and 1/4 teaspoon of pepper. Stir in the shrimp and 2 tablespoons of minced fresh parsley.
Place the shrimp on a sheet pan and broil them for approximately three minutes. When the shrimp is opaque and the shells are golden brown, turn the shrimps to broil the other side for another three minutes. Serve the shrimp with lemon wedges.
