To make seared scallops, trim the muscle from 1 to 1 1/4 pounds of scallops, rinse them in cold water, and pat them dry with paper towels.
In a pan over high heat, add 2 teaspoons of unsalted butter and 2 teaspoons of olive oil. Sprinkle salt and pepper onto the scallops, and add them to the pan. Cook them on each side until the scallops develop golden crusts, about 1 1/2 minutes on each side.
To make royal icing, whip 3 ounces of pasteurized egg whites and 1 teaspoon of vanilla with a stand mixer until the egg whites have a frothy consistency. Mix in 4 cups of confectioners’ sugar at low speed, and then turn the mixer up to high speed until the icing forms stiff peaks. Add food coloring if desired.
