To make Kraft witches' finger cookies, preheat the oven to 325 degrees Fahrenheit. Measure 1 1/4 cup of sliced almonds, and set aside 40 slices for later. Add the rest of the almonds to a food processor, and finely grind them.
In a separate bowl, combine 4 ounces of softened cream cheese, 1/2 cup of softened butter, 3/4 cup of powdered sugar, 1 teaspoon of almond extract and 1/4 teaspoon of salt. Beat the ingredients with an electric mixer until they form a fluffy consistency. Slowly mix in 1 1/2 cups of all-purpose flour, then stir in the ground almonds until the mixture forms a stiff dough.
Take the dough 1 tablespoon at a time, and roll it into 3-inch cylinders to approximate the shapes of fingers. Grease a baking sheet with nonstick spray, and place each piece about 2 inches apart on the tray. Press the reserved almond slices onto the ends of each piece to simulate the look of fingernails. With a sharp knife, make three shallow slits below the almond and halfway down the dough to simulate knuckles.
Bake the dough for approximately 15 to 20 minutes or until the cookies turn a light brown. Allow the cookies to cool for three minutes in the pan before transferring to a wire rack to continue cooling.
