  • 1 lb., cubed boneless skinless chicken breasts
  • 1 medium, chopped onion
  • 1.5 tsp., garlic powder
  • 1 tbsp. Canola oil
  • 2 15.5-oz. cans, drained and rinsed great northern beans
  • 14.5-oz. can, chicken broth
  • 8 oz. chopped, green chilies
  • 1 tsp., salt
  • 1/2 tsp., pepper
  • 1 tsp., dried oregano
  • 1 tsp., ground cumin
  • 1/4 tsp., cayenne pepper
  • 8 oz., sour cream
  • 1/2 c., heavy whipping cream
  1. Saute the chicken
  2. Saute the chicken in the canola oil in a large saucepan along with the garlic powder and onion. Saute until the juices running from the chicken are no longer pink.

  3. Add the other ingredients
  4. Add the great northern beans, green chilies, chicken broth and seasonings to the sauteed chicken and onion mixture and bring the mixture to a boil.

  5. Cook for 30 minutes
  6. Reduce heat and simmer the mixture uncovered for 30 minutes. Remove the mixture from the heat. Stir in the heavy whipping cream and the sour cream. Serve.
