What Is a Recipe for Velveeta and Rotel Dip?

Velveeta and Ro-Tel dip requires one 16-ounce can of Ro-Tel diced tomatoes with green chilies and 16 ounces of Velveeta cheese cut into cubes. Combine the ingredients and cook them in the microwave or on the stove top.

To make the dip in the microwave, cut the Velveeta cheese into ½-inch cubes. Combine it with the Ro-Tel diced tomatoes with green chilies. Place the ingredients into a microwave-safe bowl. Put the bowl in the microwave for approximately five minutes.

Remove the bowl from the microwave using oven mitts or hot pads and stir the ingredients occasionally, depending on the wattage of the microwave. Kraft's recipe suggests stirring the mixture after three minutes of cooking. Melt the cheese completely.

On the stove top, combine the ingredients in a medium-sized sauce pan. Cook the ingredients over medium heat for about five minutes. Stir the ingredients frequently to blend them. Melt the cheese completely.

Serve the dish hot with tortilla chips, crackers or vegetables. To make the dip thicker, strain the diced tomatoes and green chilies before combining them with the Velveeta cheese.

The Velveeta and Ro-Tel dip is referred to as queso. Kraft suggests spooning leftover dip over baked potatoes or pasta.
