One recipe for Velveeta broccoli casserole calls for a 16-ounce bag of frozen broccoli, 1/2 of a 26-ounce box of Ritz crackers, 3/4 pounds of Velveeta cheese and 1/2 cup of butter. It takes roughly 20 minutes to prepare.
Preheat the oven to 350 degrees F. Cook the broccoli according to the package instructions, then drain and return to the pot. Add the Velveeta and cook, stirring, until melted. Melt the butter in a separate pan, then remove from the heat.
Crumble the Ritz crackers, then add them to the butter. Stir until they are well mixed. Spray a 1 3/4-quart casserole dish with cooking oil. Spoon in half the crackers, pour in the broccoli and Velveeta mix, then top with the rest of the crackers. Bake for 15 to 20 minutes until browned and bubbly.
Another recipe has the same ingredients, but it calls for half of the butter to be melted with three quarters of the block of Velveeta in the microwave until they are creamy. Melt the other half of the butter in the microwave, and add it to the Ritz cracker crumbs.
The casserole doesn't need to be sprayed or greased, but arrange half of the broccoli at the bottom of the dish, and pour the cheese and butter over it. Repeat the steps, ending in the cracker crumbs. Bake the casserole in the same way.
