A recipe using hummus is hummus beef burgers. Simply mix together 1 pound of ground beef, 2 tablespoons of parsley, 1/2 cup of hummus and 1/2 cup diced and sautéed red onion. Form the mixture into patties, and grill.
Hummus can also be used to make a pasta sauce. Combine 1/4 cup of hummus, 1/4 cup of chicken broth, 2 tablespoons of rice wine vinegar and 2 tablespoons of soy sauce. Mix the ingredients until a thick sauce forms. Pour the sauce along with some sesame oil onto cooked spaghetti, and toss. Garnish the pasta with some toasted sesame seeds and diced green onions.
Hummus can be used as a substitute for mayo in chicken salad. Mix together equal amounts of hummus and Greek yogurt. Stir in shallot, crumbled feta cheese, chopped tomato, olive slices and chicken chunks. Spoon the chicken salad onto lettuce leaves and top with fresh parsley and dill.
Add hummus to a main dish in a chicken and hummus brown rice casserole. Cook brown rice according to package instructions and layer it onto the bottom of a baking dish. Next, layer on chicken pieces, sauteed onions, diced cucumbers and diced tomatoes. Top it off with a layer of hummus. Sprinkle soy sauce and olive oil on top before broiling the casserole until the hummus browns. Garnish with freshly chopped parsley, and serve.
