A quick dinner recipe using hamburger calls for browning hamburger meat and adding tomato sauce, tomatoes and mushrooms. The meat mixture is combined in a baking dish with prepared pasta and baked in an oven for 15 minutes before topping with cheese.
Preheat the oven to 350 degrees Fahrenheit and lightly spray an 8-inch baking pan with cooking spray. Cook 1 1/2 cups of penne pasta according to the package directions. Drain the pasta and set aside.
In a skillet, brown 1 1/2 lbs of hamburger meat. Drain the fat from the meat, and add 1 15-ounce can of Italian-style tomato sauce, 1 4 1/2 ounce can of sliced mushrooms, and 1 14 1/2 ounce can of diced tomatoes seasoned with basil, garlic and onion. Bring the mixture to a boil, remove from heat, and pour into the prepared baking dish. Add the penne pasta, and stir to mix. Cover tightly with foil, and bake in the preheated oven for 15 minutes.
Remove the baking dish from the oven, and uncover. Sprinkle 1/2 cup of shredded mozzarella cheese over the pasta mixture. Return the baking dish to the oven for up to 10 minutes or until the casserole is hot and the cheese melts.
