To make CHIApple pie-spiced mini muffins, gather 1/2 cup of Nutiva organic coconut flour, 1/2 cup of Nutiva organic CHIApple apple pie spice, 1/4 cup of Nutiva organic coconut sugar, 1 tablespoon of Nutiva organic chia seeds and 2 tablespoons of unmelted Nutiva organic coconut oil. Also required are 1 tablespoon and 1 teaspoon of cinnamon, 1/2 tablespoon of nutmeg, 1 teaspoon of baking soda, 1 tablespoon of vanilla extract and 1 tablespoon of apple cider vinegar, as well as 3 eggs.
Preheat the oven to 400 degrees Fahrenheit. Place the chia seeds in a small bowl with 3 tablespoons of water and stir manually, then set aside for approximately five minutes. Place all dry ingredients together in a large bowl and once again stir manually. Next, add all wet ingredients, including the chia seeds, to the dry ingredients. Whisk the ingredients together by hand until just barely mixed, ensuring not to overmix. Pour the mixture into a mini muffin pan and fill until each ring is approximately 3/4 full. Bake for 15 minutes.
