One recipe that uses canned sweet potato is Pillsbury's marshmallow-topped sweet potatoes. Preheat an oven to 350 F. Pour three 15-ounce cans of sweet potatoes in a baking dish, and sprinkle 1/4 cup of margarine, 1/4 cup of brown sugar, 1/2 teaspoon of salt and 15 large marshmallows on top.
Bake the canned sweet potato mix in the oven for about 25 to 35 minutes. Check that the potatoes are heated completely through and that the marshmallows are lightly browned on top. Look at the dish periodically to watch the marshmallows' color. If the marshmallows start to turn brown early in the cooking process, cover the mixture with tin foil for at least the last 10 minutes of baking time.
Use a 2-quart glass baking dish to make this recipe. Coat the baking dish with nonstick cooking spray before pouring the canned sweet potatoes into it.
Another recipe that uses either canned or fresh sweet potatoes is glazed sweet potatoes. Heat 1/4 cup of butter, 1/4 cup of maple syrup, 1/4 cup of brown sugar and 1/4 teaspoon of cinnamon in a saucepan. Bring the sauce to a boil, and then remove it from the heat. Drain two 15-ounce cans of sweet potatoes, and put them in a baking dish. Pour the sauce over the potatoes, and bake at 350 F for about 30 to 40 minutes.
