Food Network has a simple and easy-to-follow recipe for turkey noodle casserole using egg noodles and ground turkey breast. This recipe is from Rachael Ray and yields four servings.
To make Food Network's recipe, cook 1/2 pound extra wide egg noodles to al dente. In a skillet, heat 1 tablespoon olive oil, and cook 3 slices chopped bacon or turkey bacon. Add 1 1/3 pound ground turkey breast, and add 1 pound trimmed and sliced white mushrooms and 1 chopped medium onion. Cook for three to five minutes, and season with salt and pepper. Sprinkle in 2 teaspoons dried thyme or poultry seasoning. Cook for five minutes, and add 1/2 cup dry white wine. Stir in 1 cup chicken stock and 1/2 cup heavy cream. Add 1/4 teaspoon freshly grated nutmeg. Adjust seasonings to taste.
Preheat the broiler to high, and combine the noodles with the turkey. Grease a casserole dish, and transfer the noodles and turkey to the dish. Top with 2 cups grated Gruyere and 1 cup plain breadcrumbs. Place the dish eight to 10 inches from the broiler, and brown for two to three minutes, or until the cheese is melted and the bread crumbs are brown. Remove the dish from the oven, and garnish it with 2 to 3 tablespoons chopped parsley.
