Beef Teriyaki Jerky Recipe

- 1/2 cup soy sauce
- 1/4 cup sweet cooking wine, such as mirin
- 2 tablespoons sugar
- 3 1/4-inch thick pieces of fresh ginger
- 1 crushed garlic clove
- 1/2 teaspoon onion powder
- 1/2 teaspoon black pepper
- 2 pounds beef cuts such as sirloin tips, flank steaks or top or bottom rounds

- Dehydrate the beef
Blend the first seven ingredients together in a small bowl.
Trim as much fat and connective tissue from the outside of the beef as possible. Use a sharp knife to slice the beef against the grain in 1/4-inch slices. Trim as much fat and connective tissue from the slices as possible.
Place the beef in a sealable plastic bag and cover with the marinade. Make sure all of the slices are coated with marinade and refrigerate for several hours. If possible, refrigerate the beef overnight.
Prepare a smoker or dehydrator according to the manufacturer's instructions. Let the meat smoke for 5 or more hours, according to the device's instructions.
