Food Network has a simple and easy-to-follow recipe for tamale pie made with ground pork and Mexican chorizo. This recipe takes just under 1 hour 45 minutes to cook, and makes eight servings.
To make Food Network's recipe, roast 3 poblano peppers, and scrape off the charred skin. Chop, and set aside. In a pot, heat 2 tablespoons vegetable oil, and add 1 1/2 pounds ground pork, 1 pound fresh Mexican chorizo and 3/4 teaspoon salt. Cook for eight minutes, and transfer the mixture into a bowl.
In the same pot, heat 1 tablespoon oil. Add 1 diced onion, 3 finely chopped garlic cloves and 1/2 teaspoon salt. Add 1 tablespoon chili powder, 1 1/2 to 2 teaspoons chipotle chile powder, 1/2 teaspoon ground cinnamon and 1/4 teaspoon ground cloves. Cook for one minute, and return the meat mixture to the pot. Add 2 15-ounce cans diced tomatoes, 2 cups frozen corn kernels, 1 teaspoon Worcestershire sauce and the roasted poblanos. Cook, and season with salt and 3/4 cup chopped fresh cilantro. Pour into a baking dish.
Preheat the oven to 375 degrees. Combine 1 1/4 cups yellow cornmeal, 3/4 cup flour, 1 tablespoon sugar, 1 1/2 teaspoons baking powder, 3/4 teaspoon baking soda and 1/2 teaspoon salt. In another bowl, combine 6 tablespoons butter, 1 cup buttermilk and 2 large eggs. Combine both mixtures, and add 1 1/2 cups grated sharp cheddar cheese. Spread the cornbread mixture in the baking dish, and bake for 30 minutes.
