Copy Cat Subway Chocolate Chip Cookies
Create a batch of those signature chocolate chip cookies to serve up with a homemade sub for dinner.

- 2 sticks margarine
- 2 large eggs
- 2 teaspoons vanilla extract
- 1/2 cup white sugar
- 12 ounces semi-sweet chocolate morsels
- 1 cup tightly packed light brown sugar
- 2 cups self-rising flour
- Cream the sugar and margarine
- Finish the dough
- Cook the cookies
Cream the margarine and sugar with a blender. Meanwhile, sift the flour and set it aside.
Mix the eggs into the creamed margarine one egg at a time with the blender still on. Add the vanilla extract. Add the flour 1/2 cup at a time into the dough, allowing the blender to beat it into the mixture well. Add in the 12-ounces of chocolate chips and allow the beater to combine them with the mixture. When finished, cover the bowl and refrigerate the dough for one hour.
Preheat the oven to 325 degrees Fahrenheit. Line a cookie sheet with a piece of parchment paper. Place tablespoon-sized balls of dough on the sheet evenly spaced and about two-inches apart. Bake them in the oven from eight to 12 minutes. Remove them and allow the cookies to cool for 30 minutes before eating.
