Food Network has a simple and easy to follow recipe for stuffed flounder that uses a crab cake mix as stuffing. Top the flounder with a crab butter.
To make Food Network's recipe, first make the crab cake mix. In a skillet, melt 1 1/2 tablespoons butter and saute 3 thinly sliced green onions, 1 minced garlic clove and 1 teaspoon chopped parsley. In a bowl, mix 1 egg, 1/8 teaspoon cayenne pepper, 1/8 teaspoon garlic powder, 3 tablespoons heavy cream, 1 1/2 tablespoons spicy mustard, the juice of 1/2 lemon and 2 tablespoons mayonnaise. Mix in 10 crumbled saltine crackers and 1/2 pound lump crab meat.
Next, make the crab butter by folding together 2 ounces claw crab meat, 2 sticks unsalted butter, 1 tablespoon seafood base and 1 thinly sliced green onion. Roll into a log and freeze.
To make the flounder, preheat the oven to 350 degrees. Open 2 10-ounce flounder fillets by cutting along the left and right sides of the seam to make pockets. Stuff the flounder with the crab cake mix, and sprinkle with 1/2 teaspoon paprika.
Grease a baking dish and place the fish in the dish. Bake for 20 minutes. Turn the oven to broil and broil for an additional five minutes. Remove from the oven and top with crab butter and fresh parsley.
