One good recipe for stewed tomatoes requires briefly boiling cored tomatoes first, then putting them in ice to shock the skin for easy peeling. After cutting the tomatoes into small pieces, cook with butter, seasonings and 3 to 4 tablespoons of sugar until the tomatoes are soft.
Some seasonings to include are basil, bay leaves, salt, pepper and parsley to taste. Cooks can also add in finely chopped celery and onion for additional bulk, nutrients and flavor. This can be cooked on a stovetop in a sauce pan for roughly 30 minutes at a simmer. Alternatively, cook the dish in a slow cooker on low for up to nine hours.
