Heat oil in a skillet, cook the ground beef until browned, add chopped bell pepper, onion, garlic and salt, and cook until the onion is softened. Stir in a can of crushed tomatoes, 1 1/2 cups of rice and 1 1/4 cups of broth, and cook until rice is tender.
You can substitute other meats for ground beef in this recipe, such as turkey, chicken or pork. Add seasonings and spices to the beef and vegetables, such as Worcestershire sauce or chili powder, before adding the rice.
Spanish rice with ground beef and cheese casserole is a flavorful alternative to the traditional recipe. To prepare it, preheat the oven to 350 degrees Fahrenheit. In a skillet, cook 1 1/2 cups of long-grain rice in canola oil until golden. Add 1 can of diced tomatoes, 1/2 cup of mild salsa and 1/2 teaspoon each of ground cumin, onion powder and garlic powder. Add 1/4 teaspoon of oregano, 1 teaspoon of chili powder and 4 cups of chicken broth. Bring the mixture to a boil, and then reduce heat and cover, cooking until the liquid is almost absorbed and the rice is tender. Meanwhile, in an oven-proof skillet, brown 1 pound of ground beef. Once the rice is done cooking, add it into the beef, cover it with shredded cheese, and bake it uncovered until the cheese is melted.
