Tomato Pie by Southern Living is one Southern tomato pie recipe that uses fresh tomatoes and basil with a sour cream crust. The recipe makes six servings, and the total prep and cook time is 2 hours and 15 minutes.
To prepare the sour cream pie crust, mix 1 1/4 cups of all-purpose flour, 2 teaspoons of baking powder and 1/2 teaspoon salt in a bowl, and cut in 1/2 cup shortening with a pastry blender until the mixture is crumbly. Add 1/2 cup of sour cream, and stir to combine. Flatten the dough and wrap it with plastic wrap to refrigerate for 1 to 24 hours. Preheat the oven to 350 F, and prepare the pie crust in a 9-inch pie dish, crimping the edges.
Peel 4 medium tomatoes, and cut them in 1/2-inch slices, placing them on paper towels. Sprinkle them with 1/2 teaspoon of salt, and let them stand for 30 minutes. Pat them dry. Mix together 1/2 cup of mayonnaise, 2 tablespoons of chopped fresh basil, 3/4 cup of Parmesan cheese and three green onions, chopped. Bake the pie crust until lightly brown, about 10 to 12 minutes. Sprinkle 1/4 cup of Parmesan cheese into the pie crust, and arrange the tomatoes on top. Spoon in the mayonnaise mixture before baking for an additional 34 to 37 minutes. Let the pie cool for 5 minutes before cutting and serving.
