One recipe for Southern-style salmon patties calls for combining canned salmon with onions, parsley, lemon zest and seasonings in a large bowl. Stir in crushed saltine crackers, an egg and a little water, then shape into patties. Cook the patties in hot oil until browned on both sides. Serve hot.

To prepare the Southern-style salmon patties, add 1 14.75-ounce can of salmon to a bowl, with its juices. Mash the salmon into tiny chunks using a fork. Add in 1/3 cup minced onion, 1 tablespoon chopped parsley, 1/4 teaspoon lemon zest and 1/4 teaspoon Cajun seasoning, black pepper or Old Bay seasoning. Next, finely crush 15 saltine crackers, and stir into the salmon mixture, along with 1 large beaten egg and 1/8 cup water. Combine all the ingredients well, then use your hands to shape the mixture into four to six salmon patties.

Add 1/2 cup of vegetable oil to a large skillet and place over medium-high heat. When the oil is hot, add the patties, and cook until fully browned on one side. Carefully flip the patties over with a spatula, and continue cooking until browned on the other side. Drain the patties on paper towels before serving. Serve the patties with an optional squeeze of fresh lemon juice.
