To prepare the Southern-style salmon patties, add 1 14.75-ounce can of salmon to a bowl, with its juices. Mash the salmon into tiny chunks using a fork. Add in 1/3 cup minced onion, 1 tablespoon chopped parsley, 1/4 teaspoon lemon zest and 1/4 teaspoon Cajun seasoning, black pepper or Old Bay seasoning. Next, finely crush 15 saltine crackers, and stir into the salmon mixture, along with 1 large beaten egg and 1/8 cup water. Combine all the ingredients well, then use your hands to shape the mixture into four to six salmon patties.
Add 1/2 cup of vegetable oil to a large skillet and place over medium-high heat. When the oil is hot, add the patties, and cook until fully browned on one side. Carefully flip the patties over with a spatula, and continue cooking until browned on the other side. Drain the patties on paper towels before serving. Serve the patties with an optional squeeze of fresh lemon juice.Learn more about Seafood
