Start by preheating the oven at 375 degrees Fahrenheit. Butter a baking dish, and set it aside. Pour the egg whites into a medium-sized bowl, beat them until they form a stiff peak, and set aside. Pour 1 cup of milk into a mixing bowl, and add the cornmeal. Whisk them together.
Pour the remaining 2 cups of milk into a sauce pan, and bring to a simmer. After the milk scalds and starts to steam, add the cornmeal mixture. Continue cooking while whisking and stirring constantly until the cornmeal mixture thickens and begins to pull away from the side of the pan. Take the sauce pan off the heat.
Add the sugar, salt and butter, and whisk vigorously together until the butter melts and blends into the cornmeal mixture. Add the egg yolks slowly while beating vigorously to ensure that they do not cook when they come into contact with the hot cornmeal mixture.
Use a spatula to gently fold the egg whites into the cornmeal mixture until all the egg whites incorporate into the warm cornmeal. Pour the mixture into the baking dish, and bake for an hour. Serve hot with butter or honey.Learn more about Cooking
