To make the Pioneer Woman's Key lime pie, first preheat the oven to 350 F. To make the crust, crush 18 graham crackers in a Ziploc bag or food processor. Pour the crushed crackers into a bowl, and stir in 1/3 cup each white sugar and melted butter. Press the graham cracker mixture into a pie pan, and bake for about 5 minutes to set. For the filling, combine 1 heaping tablespoon lime zest, 1/2 cup lime juice, 2 egg yolks and a 14-ounce can sweetened condensed milk in a bowl. Beat together until the mixture is smooth and thick. Pour into cooled crust and bake for 15 minutes. Remove from the oven, let cool and refrigerate for at least 1 hour.
Taste of Southern's recipe for Key lime pie is slightly more complex. The crust for this recipe combines 1 1/4 cups graham cracker crumbs, 6 tablespoons melted butter, 3 tablespoons granulated sugar and 1/2 teaspoon vanilla or almond extract. The filling of this pie uses lemon juice and evaporated milk in addition to the lime juice and condensed milk.
Key lime pie may also be made in a store-bough graham cracker crust. Serve topped with whipped cream or meringue.
