One of the best sourdough bread recipes is Emeril's basic sourdough bread from the Food Network. The bread takes under two hours to complete using a sourdough starter containing yeast, sugar, flour and warm water.
Before making the bread, prepare the sourdough starter. Pour 3 cups of warm water in a bowl, then mix in 1 teaspoon of sugar and 1 1/2 tablespoons of active dry yeast. Allow the yeast mixture to sit for at least five minutes. Once it begins to foam, stir in 3 cups of all-purpose flour. Cover the starter dough with a towel and allow it to sit in a warm place for eight to 12 hours.
To prepare the bread, add 1 1/2 cups of the completed sourdough starter, 2 cups of bread flour and 3/4 teaspoon of salt into a mixing bowl. Mix the ingredients with a dough hook, coat the dough with oil, and cover it with plastic wrap. Allow the dough to rise for 60 to 90 minutes. Meanwhile, add 1 1/2 cups of flour and 1 1/2 cups of warm water to the remaining sourdough starter for future breadmaking.
After 90 minutes, knead the dough, shape it into a ball, and allow it to rise again for one hour. Cut an X in the surface of the dough, spray with a mister, and place the dough on a baking sheet dusted with cornmeal. Bake for 60 minutes at 400 degrees Fahrenheit. Cool on a wire rack before serving.
