To make one of the best soft oatmeal cookies, combine 1 cup of butter with 1 cup of white sugar, 1 cup of brown sugar, 2 eggs, 1 teaspoon of vanilla and 2 cups of flour, as well as 1 teaspoon of baking soda, 1 teaspoon of salt, 1 1/2 teaspoons of cinnamon and 3 cups of quick-cooking oats, and bake cookies at 375 F for eight to 10 minutes. Cool the cookies completely after baking them.
Alternatively, make the cookies using old-fashioned oats, M&M candies and cinnamon. Whisk 1 teaspoon of cinnamon with 1/2 teaspoon of salt, 1/2 teaspoon of baking soda and 1 1/3 cups of flour. Cream 1/2 cup of butter, 3/4 cup of brown sugar and 1/4 cup of granulated sugar until smooth. Mix in 2 eggs and 2 teaspoons of vanilla, and beat until smooth. Beat in the flour mixture until smooth, and mix in 3 2/3 cups of old-fashioned oats.
Stir in 1 cup of M&M candies, and chill the dough for three to four hours. As an alternative, form the cookies using the dough, and refrigerate them for 1 1/2 hours on a cookie sheet. When ready to bake, press extra M&M candies, chocolate chips, nuts, and raisins onto the cookies. Bake the cookies for 10 to 12 minutes at 350 degrees Fahrenheit.
