There are several good recipes for roasted top sirloin such as a simple herb rub or roast sirloin of beef with basic salt and pepper for seasoning. You need a roasting pan and butcher twine to make a good roast.
To make a flavorful herbed roast, cut small holes into the meat, and push whole garlic cloves into the spaces. Use about one garlic clove per pound of meat. Tie up the roast using butcher twine so that it stays together during cooking. In a bowl, mix together 2 tablespoons of sea salt, 1 tablespoon of cracked black pepper, 1 teaspoon of thyme and teaspoon of oregano. Rub the mixture into the roast.
Place the meat with the fatty side up so that it bastes the rest of the roast while cooking. Cook the roast for 15 minutes at 450 degrees Fahrenheit, then reduce the temperature to 325 degrees Fahrenheit and cook until the internal temperature of the meat is at 135 degrees Fahrenheit. Remove the roast from the oven, cover with aluminum foil and allow it to rest for 15 minutes before carving.
