Stove Top rice does not exist, so there is no recipe for rice pudding using this product. Stove Top is a line of stuffing that does not include any form of rice. Minute Rice does offer a rice pudding recipe using its instant white rice.
To make rice pudding with Minute Rice, combine 3 cups of milk, 1 cup of uncooked Minute Rice, 1/4 cup of raisins and 1/4 cup of sugar in a saucepan. Add 1/4 teaspoon of salt, and bring the mixture to a boil. Reduce the heat to medium-low, and simmer for 6 minutes. Stir the mixture constantly as it cooks.
In a small bowl, beat 2 large eggs with 1 teaspoon of vanilla extract. Add a small amount of the hot pudding mixture to the eggs and stir, then slowly add the egg mixture to the saucepan. Stir the pudding constantly while adding the eggs. Cook the pudding on low heat for one minute, or until thickened. Continue to stir the pudding, and do not allow it to boil.
Remove the pudding from the heat. Allow the rice pudding to stand for 30 minutes before serving, and serve warm. Store any unused pudding in the refrigerator.
Minute Rice recommends adding different types of dried fruit in place of raisins to add a unique flavor to the rice pudding. Fruit suggestions include cherries, chopped apricots, chopped pineapple and sweetened cranberries.
