A good recipe for sweet potatoes with pecan praline topping is the praline-topped sweet potato recipe from Pillsbury. The recipe requires sweet potatoes, butter, brown sugar, pecans and vanilla essence. Also required are cinnamon and flour.
To make the sweet potato stuffing, peel, boil and mash 4 large sweet potatoes. Alternatively, use two 24-ounce cans of mashed sweet potatoes. In a large bowl, mix the sweet potatoes with 1/2 cup of butter, 1 tablespoon of vanilla essence and 1/2 teaspoon of ground cinnamon. Spray a 2 1/2-quart casserole dish with cooking spray, and pour the sweet potato mixture into it.
To make the pecan praline topping, mix 1 cup of flour, 3/4 cup of sugar, 1/2 cup of melted butter and 1 cup of chopped pecans in a medium-sized bowl. A food processor can also be used to achieve a fine and crumbly mixture.
Spread this topping mixture evenly over the sweet potatoes. Bake the sweet potatoes with pecan praline topping for 30 minutes at 350 degrees Fahrenheit.
This recipe makes 12 servings. For a thicker topping, double the topping ingredients. Pumpkin pie spice or freshly ground nutmeg can be used in place of the cinnamon. The sugar can also be halved for a less-sweet topping.
